General Tso’s Chicken

This chicken from Food and Wine was slightly time consuming and had a lot of steps but the end product was delicious!  While it felt like a healthier version of a restaurant’s General Tso’s, let’s face it – it’s still chicken fried in oil so let’s not kid ourselves.  Before frying, I coated the chicken in the batter using a freezer bag which worked perfectly (less mess!).  The sauce thickened up nicely and was very tasty – not too sweet, not too spicy.  I won’t make this often because I try to stay away from frying food but if you are a big fan of General Tso’s, I say go for it!

Additions:  None

Omissions:  None

Substitutions: 

  • 1/4 teaspoon ground ginger for fresh ginger

Chicken Tacos with Mango-Avocado Salsa

When I think of a light summer meal, these tacos are the kind of thing I think of.  The combination of the spices give this chicken attitute!  I used thin sliced chicken breasts which cook faster and make it easy to cut into small bite-sized pieces.  The cayenne pepper and jalapeno provide the kick while the mango adds a refreshing sweetness, but not too much.  My mouth was still slightly on fire for a while after I finished eating…but I didn’t mind.  I look forward to eating these for lunch tomorrow!

Additions:  None

Omissions: 

  • Onion (I forgot to buy one – but I don’t like raw onions anyway)

Substitutions: 

  • Thin sliced chicken breasts instead of breast halves

Barbecue Pulled Chicken Sliders

A quick and easy recipe from Cooking Light – especially if you already have cooked chicken on hand.  I cooked skinless, boneless chicken breasts on my Cuisinart Griddler and shredded them with a fork.  I didn’t have onion powder or any onions so I used a small shallot instead and replaced the mini buns with 100% whole wheat hamburger buns (which yields 1 sandwich per serving instead of 2 minis).  The bread and butter pickles add a nice flavor bite to the sandwich.

Omissions: None

Substitutions:

  • Shallot for onion powder
  • Boneless, skinless chicken breasts for rotisserie chicken breasts
  • Whole wheat hamburger buns for mini buns

Overall Rating: Love It
