Chicken Tacos with Mango-Avocado Salsa

When I think of a light summer meal, these tacos are the kind of thing I think of.  The combination of the spices give this chicken attitute!  I used thin sliced chicken breasts which cook faster and make it easy to cut into small bite-sized pieces.  The cayenne pepper and jalapeno provide the kick while the mango adds a refreshing sweetness, but not too much.  My mouth was still slightly on fire for a while after I finished eating…but I didn’t mind.  I look forward to eating these for lunch tomorrow!

Additions:  None

Omissions: 

  • Onion (I forgot to buy one – but I don’t like raw onions anyway)

Substitutions: 

  • Thin sliced chicken breasts instead of breast halves

Panini with Chocolate and Brie

I’m a big fan of paninis but the first time I saw Giada DeLaurentiis make this sandwich on her show Everyday Italian, I thought it was an odd combination.  But curiosity got the best of me so I just had to try it.  The salty, creamy brie pairs well with the semi-sweet chocolate while the basil surprisingly complements them both.  And you can’t really go wrong with sourdough bread.  Because of its richness, it’s not something I would make for a meal again (I couldn’t even finish the whole thing!).   However, I would consider it in half-portions for a dessert or a special occasion (like a chocolate party!).

Bananas Foster Bread

The first time I made this bread last year, I ended up setting my oven on fire and never got to try the finished product.  I have to admit I was a little nervous this time but luckily there was no fire, only the lingering aroma of banana goodness.  Everyday banana bread is already delicious and this recipe, with dark rum, is like a blinged-out version.  The addition of flax seed (which took me a while to find at the store) adds texture and a bit of a nutty flavor which I like.  The icing glaze adds sweetness but it isn’t necessary – the bread is good enough without it.
