Adobo Chicken

Yes, this is yet another chicken recipe.  As I mentioned before, I used to be a vegetarian (13 years!) and now I eat poultry and some fish but still no pork or beef.  Therefore, you will see a LOT of chicken recipes here.  That being said, Adobo Chicken is another one.  I was happy to make this recipe because I actually had all of the ingredients on hand and didn’t need to run to the store.  But…I didn’t love it.  It wasn’t bad, but it reminded me of something that I used to eat as a kid that I didn’t like (the only thing that pops in my head is liver and onions – yuck!).  This sauce was okay and the onions actually added a little something to the chicken but unfortunately I doubt I’ll make this one again.

Additions:  None

Omissions: 

  • About half of the onions

Substitutions: 

  • Chicken breasts instead of chicken thighs

Overall Rating:  So-So

Caribbean Chicken Kebabs with Lime-Cayenne Butter

I’ve been wanting to make these Caribbean Chicken Kebabs for a while now but since I live in a condo and can’t have a charcoal grill on my deck, I decided to pull out my Cuisinart Griddler and do a little indoor grilling.  I’m sure the taste is much better on an outdoor grill but I’ll tell you what, these were still pretty darn good.  The marinade of fresh orange juice, soy, ginger and garlic gives the chicken a little flavor and the grilling brings out the natural flavors of the crisp peppers, sweet pineapple and juicy cherry tomatoes deliciously.  The Lime-Cayenne Butter gives these kebabs the slightest bit of acidity and heat but there is something about smothering fresh vegetables and lean chicken with a stick of butter that just doesn’t seem right to me.  A sprinkle of cayenne and a squeeze of a few limes before grilling still would have provided flavor with much less fat.

General Tso’s Chicken

This chicken from Food and Wine was slightly time consuming and had a lot of steps but the end product was delicious!  While it felt like a healthier version of a restaurant’s General Tso’s, let’s face it – it’s still chicken fried in oil so let’s not kid ourselves.  Before frying, I coated the chicken in the batter using a freezer bag which worked perfectly (less mess!).  The sauce thickened up nicely and was very tasty – not too sweet, not too spicy.  I won’t make this often because I try to stay away from frying food but if you are a big fan of General Tso’s, I say go for it!

Substitutions: 

  • 1/4 teaspoon ground ginger for fresh ginger
